I read an article several years ago that the Chinese were accusing the US of dumping trotters on China (selling them for extremely low prices). I thought it was funny at the time, I mean the US probably consumes maybe a 100 pigs worth a feet a month so there are likely 100,000s of pigs worth of feet not being eaten. If the pork processors can get a nickle for them instead of throwing them away, seems like a logical sell to me. Give me the pigs chops, ribs, hams, and pulled roasts and send all the trotters to China where they are a delicacy.
